NoPimento Cheese

Can I still call it pimento cheese if I technically don’t use any pimento peppers?🤔 Truth be told, they’re not my favorite.🤫 I prefer to use diced jalapeños or sundried tomatoes. I also like to add bacon for added texture and a hint of smokiness.🥓👍

I grew up eating pimento cheese and adore it. Homemade is best instead of the day-glo orange kind that you find at the grocery store. Although, there are much better store bought versions now than the kind I grew up eating. 

I’ve been making this delightful spread for several years now. I like to a little sour cream with the mayonnaise for a more balanced flavor (especially if you aren’t in love with mayo). I’ve also found that if you use sun dried tomatoes, you can add a little oil from the jar to really make it pop!

My simple method is described below. I hope you enjoy this versatile spread for lunch or as a snack. It’s fabulous in a sandwich, wrap or on crackers. It’s also a fun addition to your cheese board. If you really want to go wild, you can even spread it on a burger!🍔😋

My first task when making pimento cheese is to shred a block of sharp cheddar. I prefer this texture to shredded cheese out of the bag. It just tastes fresher to me. Next, finely dice a few sundried tomatoes so you get some in every bite. Then, I cook a few pieces of bacon and crumble. 

When finished with prep, I place all three ingredients into a bowl and season with salt and pepper. I add a few dollups of mayo to bind the ingredients as well as a little sour cream. I top this off with about a tablespoon of the sundried tomato oil. I give everything a good stir, season to taste and chill for a few hours. So yum! ✌️💜🍴
