
I finally tried the TikTok sensation that is baked feta pasta and it was definitely worth the hype! This is a dish that you can easily add to your meatless Monday repertoire as it does not require much time or effort but really brings the flavor.😋
I pretty much followed the original recipe minus the basil plus sautéed spinach to add a little more color and nutrients. My local grocery store is not the kind of place to carry shallots. Hence, it did not have a block of feta in stock so I had to settle for crumbles. However, they melted and tasted just fine!🤷♀️👍
I use feta and sun dried tomatoes often with pasta salad and adore that flavor combination so I was really looking forward to incorporating those elements into a hot dish and it did not disappoint. My toddler loved it and even asked for “more.”🥰
This dish was very easy to make. You basically bake the tomatoes and cheese with some spices until the cheese bubbles and the tomatoes sing, add garlic, stir some cooked pasta in and presto! I served it with a simple salad and it hit the spot.🍜🥗

You will need: One package of cherry tomatoes, container of feta cheese crumbles, olive oil, red pepper flakes, half bag of spinach, half package of penne pasta, 4 cloves of garlic, S & P
To prepare: Place tomatoes in a baking dish and toss with olive oil, salt and pepper. Place feta crumbles in the middles into a mound with the tomatoes surrounding it. Drizzle more olive oil over the top. Add a couple pinches of red pepper flakes over the cheese. Bake at 400 for 30 minutes and then at 450 for an additional 5 minutes or so until the cheese is slightly browned.
While that is baking, sauté the spinach in olive oil with salt until wilted. Boil the noodles until al dente and drain. Pull feta bake out of the oven when done, stir in garlic, then add spinach and pasta. Bon appetit! ✌️💜🍴
