Mississippi Pot Roast

I did not invent this delightful dish but want to share my version for those of you who haven’t made it yet. It’s juicy, savory and simply delicious.😋

I changed a couple of ingredients from the more traditional recipe. For instance, I used beef broth instead of an au jus packet. I also subbed banana peppers for pepperoncini because they’re a lot cheaper and taste the same to me. 

There are many ways to enjoy the roast to include over rice, with noodles, or potatoes and carrots to name a few. I also love to use leftover roast for sandwiches. However, for dinner I like to serve it over mashed potatoes. It’s hearty, filling and comforting. If you really want to save time and money you can make instant mashed potatoes. My favorite flavor is the cheddar and sour cream!👍

You will need:  1 pack of chuck roast, 1 cup of beef broth, 1 packet of ranch seasoning, half jar of banana pepper rings, 1/4 cup of butter

To prepare:  Place roast in a slow cooker. Season with salt and pepper and sprinkle entire ranch packet over the top. Pour beef broth onto roast. Spread banana pepper rings to cover roast. Add dots of the butter on top of everything. Cover and cook on low for 8 hour in your crockpot. Shred with two forks and enjoy.🍽
