
Does anyone else live in a house divided? Meaning you and certain family members may have very different tastes? Literally, this is my life.
My hubby enjoys chicken salad with lots of mayo and boiled eggs. He doesn’t love celery and prefers diced jalapeño to sweet relish. I like to mix it up and try different components with my chicken salad. For instance, I’m a big fan of buffalo ranch and also adore curry chicken salad with dried cranberry.💕
So, I decided to make two different types to satisfy all parties. I started by boiling a few chicken breasts and three eggs. While that was going, I diced up a few sun dried tomatoes and banana pepper rings (my go to combo). I learned the next trick from Antoni on Queer Eye. I halved several red grapes and soaked them in red wine vinegar.
Once the eggs and chicken were cooked through, I drained and rinsed them with cold water. Then, I diced up the eggs and finally the chicken. Now that prep was done, I divided the chicken in two bowls and seasoned with salt and pepper.
Classic with a twist
For hubby’s salad, I added the eggs and a few tablespoons of diced jalapeño. Next, I added a few big dollops of mayo and a couple squirts of spicy mustard. Then, I topped everything with juice from half a squeezed lemon and seasoned once more. Hubby taste tested and approved. Now it’s time to chill in the fridge.😎
Pesto grape
For my batch, I seasoned the chicken and added the chopped veggies. I mixed in half of a small jar of pesto and added the grapes. I added another tablespoon or so of pesto and a couple small spoonfuls of mayo. I seasoned once more and added a few shakes of fresh lemon juice. Mmmm, the taste test revealed the deliciousness!😋 Plus, it’s so pretty! This would be great for a ladies lunch or get together. It would also be fab on crackers or in a croissant!
