My favorite cookies

Out of all the cookie recipes in the land, I must say I enjoy making peanut butter cookies the most. I absolutely love the smell, texture, the memories…ahh…yum! 🥰🍪😵‍💫

Ok, I’m back.🙋‍♀️ I’ve tried making peanut butter cookies various ways to include traditional, gluten free, with chocolate chips, etc. and they have all been lovely. Although, I have yet to master the fork hashtag technique. My toddler is more skilled at this than I am (see below).💕

For me it’s all about taste! Of course I want my food to be pretty but I’ll try to master aesthetics once I have the recipe down and I have finally found THE ONE! Are you ready for my secret ingredient? My ace in the whole?👇

It’s cookie butter! Yes, you heard that right.👂👍 The one and only Trader Joe’s cookie butter. So I guess I could call them cookie butter cookies but would that be too meta? 🤷‍♀️🤣

My simply scrumptious recipe is included below. No flour or mixer required. Just five ingredients and these cookies are ready in about 20 minutes. They are soft, yet chewy. The peanut butter flavor is so inviting with a hug of homey gingerbread notes thanks to the cookie butter.🤗 These are hands down my best yet favorite cookies ever. Enjoy! ✌️💜🍴

You will need:  1/2 cup of cookie butter, 1/2 cup natural creamy peanut butter, 1/2 cup sugar, one egg, 1 tsp vanilla 

To prepare:  Scoop out a half cup each of cookie butter and peanut butter and place in small mixing bowl. Add sugar, cracked egg, and vanilla. Stir until all ingredients are combined and creamy. Scoop out spoonfuls of dough with a cookie scoop onto a parchment lined baking sheet. Gently flatten each one with a fork. 

Bake at 350 degrees for 12 minutes. Let cookies remain on the pan for a few minutes to firm a little (go ahead and take a test bite if you must) and then place on cooling rack. This recipe makes about 24 cookies and keeps well in an airtight container for 3 days (if they last that long)!🍪😋🍪
